KIWI CITRUS COOLER

You can serve this mocktail at your house party and impress your guests or if you have friends who do not consume alcohol, make them comfortable in the party by serving them this exotic mocktail. It is really easy to prepare and can be prepared in 5 minutes if you have all the things available which are needed to prepare it. This beautiful green colour beverage absolutely tempts me each time I prepare it. This recipe is an inspired version (from TarlaDalal’s website) but I’ve made certain changes in the recipe.                                                                                                           I have written details about the kiwi fruit in my previous recipe with this fruit. You can refer to my recipe Kiwi Blast for more details about kiwi fruit. Kiwi fruit is still not very easily available everywhere in India and if you have bought it out of curiosity someday, and are wondering what to do with it, my suggestion is this recipe, this will make a perfect beginner kiwi recipe. Ofcourse, you can also eat it up, now that depends on you :D. If it is summer time, it is even better, it will also act as a good detox. I do not add kiwi crush in the recipe(as given in the original recipe), infact I make compote out of fresh kiwis, blend it into a paste and then add it.

Ingredients
  • Kiwi fruit - 1
  • Sugar syrup - 2 tbsp
  • Sugar (for compote) - 4 to 5 tsp/as required
  • Lemon juice - 2 tbsp
  • Chilled Club soda/Sparkling water - 1 cup (150 ml for each serving)
  • Ice cubes - 1 cup
  • 2 Kiwi slices - to garnish
Instructions
  1. Wash and chop kiwi fruit.
  2. In a saucepan add chopped kiwis, sugar and cook on a low flame for 5 to 7 minutes or until the kiwis have softened completely. Keep stirring in between.
  3. Now, remove the mixture from flame and let it cool. If possible refrigerate for a while.
  4. Blend the mixture into a paste and store in a jar if it is left after using. This ground compote will act as the kiwi crush.
  5. Take a glass, and fill ¼th of it with ice (my glasses were not that tall, if you have a tall glass, fill ½ of it with ice). If using crushed ice,lock the ice inside the glass with a spoon or a stirrer.
  6. Now in each glass after adding the ice, add 1 tbsp of lemon juice,1 tbsp of sugar syrup and 2 tbsp of prepared and crushed compote (If you want you can also add 1 tbsp of the compote, I like it sweet actually)
  7. To finish, add 150 ml soda in each glass and garnish with kiwi slices.
  8. Serve immediately, and keep stirring as you enjoy it.
