Lassi is basically an Indian drink which is yoghurt based and is very popular in the sub continent. It is a cooling and refreshing drink which can actually bring you back to life after a dull and tiring day. There are various types of lassis which are favoured in different regions and can be sweet or salty accordingly. In India lassi mostly means sweet and is made up of full cream curd mixed with sugar and little water or milk topped with a layer of malai or clotted cream. Though now a days there are differnt variants available that are flavoured with rose, kesar, mango etc. My version of lassi recipe today is a Kesar(saffron) Elaichi(Cardamom) Lassi which is one of my favourite and is really rich. Kesar Elaichi Lassi is not very common though but I would highly recommend to try it out if you want an outburst of flavours in your mouth. Having said that I would also like to say that saffron and cardamom really go well with curd.
The recipe is very similar to a traditional sweetened lassi, its just that the addition of flavours make it more tasty. I can swear by cardamom in any Indian dessert and so why should lassi be stranded alone without flavouring. You can also come up with your favourite flavours when it comes to lassi and I’m sure you won’t be disappointed.
This rich and creamy lassi is also extra rich because of the additional full cream milk which I used instead of water. I totally avoid adding water in my lassis because I like it rich, if you are on a diet, you can also go for low fat dairy and a sugar substitute. - Saffron Strands(Kesar) - a pinch
- Cardamom Powder - ½ Tsp
- Chilled Curd - 250 ml
- Chilled Full Cream Milk - ⅔ cup
- Fresh Cream - 2 Tbsp
- Sugar - 4 to 5 Tbsp
- Ice Cubes - 4 to 5
- Pistachios and saffron strands to garnish
- Soak saffron strands in warm water and set aside.
- Take a blender and add in curd, cardamom powder, milk, fresh cream, sugar, ice cubes and blend well and until it becomes a smooth and lump free liquid.
- Pour into glasses, garnish with pistachios, saffron strands and serve.
- Do chill the lassi until served.
