MASALA CHAAS – SPICY BUTTERMILK

Hey friends! I am back today with a very interesting recipe. BUTTERMILK, which is popularly known as CHAAS or MATTHA in India. Chaas, a traditional beverage from Gujarat, also known as Mattha in Rajasthan is one of the most refreshing drinks for summers. The traditional way of preparing Chaas is unique where yoghurt is churned in a vessel called madhani. On whipping the yoghurt, butter comes on top which is strained with a piece of cloth. The remaining liquid which is left out after straining is known as Chaas and is consumed with addition of different spices. People in different parts in India consume this beverage in various ways and so do I. I make an instant Chaas wherein I skip out some ingredients which are added in the original recipe. I do not add curry leaves, ginger, asafoetida, mint leaves etc. Still I just love my version of Chaas and I am going to share the recipe today. It is known as MAJJIGE in Karnataka, TAAK in Marathi, MAJJIGA in Telegu, MORU in Tamil/Malyalam and GHOL in Bengali. Chaas is drank mostly in summers so as to balance out the body temperature which tends to be high during summers. It is more popular in places like Rajasthan, Gujarat, Maharashtra etc. because these regions are comparitively more hot than other parts of India. This beverage can be consumed on its own and can also be served with meals which helps in proper digestion.

MASALA CHAAS RECIPE

Prep time – 8 to 10 mins

Cook time – Nil

Serves – 2 to 3

Category – Beverage

INGREDIENTS:

Curd – 1 cup

Roasted Cumin powder – 1 tsp

Black Pepper(crushed) – 1/2 tsp

Chat masala – 1 tsp

Red Chilli powder – a pinch

Salt – 1 tsp/as required

Water – 2 cups

Green Chilli – 1 tsp chopped (for garnish)

Coriander leaves – 2 tsp chopped ( for garnish)

METHOD:

In a mixing bowl add curd, roasted cumin powder, crushed black pepper, chat masala, red chilli powder, salt and blend them using a hand blender or a hand churner. Add water and whip the mixture again. Pour it out in glasses and garnish with chopped green chillis and chopped coriander leaves. Serve chilled.
