With winters setting in, my craving for dessert takes a high jump every year. Yes, I think winter is the best time to whip up desserts beautifully because ingredients are so easy to handle and you do not have frostings and buttercreams melting all over and spoiling your hardwork. A lot of people may disagree but here in India, its not freezing cold which means I can defintely whip up double cream which has been sitting in room temperature itself. Anyway, that was just a little information I wanted to share. Well, coming back to today’s recipe, its just not any recipe today, its my citrusy take on the humble “Brownies.” I love brownies but don’t you think even brownies should have variants and that’s exactly what I did, I baked some fudgy lime brownies which are to die for. Who doesn’t like a colourful cake? I’m a lover of all things colourful so this kind of recipe coming from me is nothing unusual. Well, if you do not know what funfetti is, they are coloured edible sugar sprinklers and jimmies which we mostly use to decorate cakes, cupcakes and desserts. Funfetti cake is a plain white vanilla cake, its just more special due to addition of funfetti in the cake batter itself and then baked further. My version of ultimate funfetti birthday cake is even more special because first off this is an eggless cake (no compromise in taste though) and next it is specially designed to be a perfect birthday cake. If you are a baker, the name “Madeleine” may not be unheard. For others the name may sound like a complicated confectionery but trust me, it is not as tricky as you think and you can easily make these beautiful bite sized dessert at home. Let me tell you that this thing may look and sound really fancy but the French madeleine recipe just needs your regular sponge cake ingredients, yes the technique is a bit different and once you master that you can make madeleines every now and then just like me.
